ServSafe's own FAQ gives the passing score for the Food Protection Manager exam as 70%, which means at least 56 correct out of the 80 scored questions. Many prep providers quote 75% (60 of 80). The safe plan is to practise until you clear 75%, then sit the exam.

What is the passing score for ServSafe Manager?
70%: at least 56 of the 80 scored questions, according to ServSafe's FAQ. The other 10 of the 90 questions are unscored pilot questions.

Pilot questions are being tried out for future exams. They look like any other question, so you cannot skip them; answer everything as if it counts.
Is the ServSafe passing score 70 or 75?
ServSafe's FAQ currently says 70%. Many prep sites and courses still say 75%, and we could not find an official statement explaining the difference, so we treat 70% as the line and 75% as the target.
Practising to the higher number costs you little and protects you in two ways. First, no practice test is a perfect copy of the real one; a few points of margin absorb the difference. Second, the 10 pilot questions mean you cannot count your score during the exam, so being comfortably over the line is the only way to know you are over it.
If your employer, school or local health department names its own requirement, that rule applies to you. Some jurisdictions accept several accredited certifications and set their own renewal periods.
How many questions can you miss on ServSafe Manager?
At 70%, up to 24 of the 80 scored questions. At the 75% many prep providers quote, up to 20. Because you cannot tell the 10 pilot questions apart, think of it as out of 90.
| Line | Correct needed (of 80 scored) | Misses allowed (of 80 scored) | The same rate over all 90 |
|---|---|---|---|
| 70% (ServSafe FAQ) | 56 | 24 | 63 right, 27 wrong |
| 75% (often quoted) | 60 | 20 | 68 right, 22 wrong |
Twenty-four misses sounds generous until you see how they arrive. A candidate who is shaky on the flow of food can lose eight or nine questions there alone, and three or four more on exclusion rules and dish machine numbers, before counting ordinary slips. That is why the margin matters more than the line.
The same arithmetic explains our bands. Our mock scores all 90 questions because we cannot copy the pilot questions; 63 right is 70% and 68 right is 75%. If you are scoring 64 or 65, you are passing on a good day and failing on a bad one, which is why the target is two mocks at 68 or more.
What practice score means I am ready for ServSafe?
Clearing 75% on two different full 90-question mocks, on questions you have not seen before, with no content area far below the rest.
| Band | Percent right | Out of 90 | What it means |
|---|---|---|---|
| Early practice | Under 60% | Under 54 | Learn the temperature table first |
| Building | 60% to 69% | 54 to 62 | Drill your weakest area |
| Close | 70% to 74% | 63 to 67 | At the published line on our questions, short of the 75% target |
| At the line | 75% to 84% | 68 to 76 | At or over the target; confirm on a second mock |
| Strong | 85% or more | 77 or more | A comfortable margin |
These bands are our labels on our questions, not a prediction of your result and not a percentile. Take the free ServSafe practice test to see where you are.

Where do people lose points on the ServSafe exam?
On exact rules with numbers and on rules with a condition: two-stage cooling, date marking from day 1, the 4- and 6-hour time limits, exclude versus restrict, and the dish machine and sanitizer numbers.
| Rule | Number | Source |
|---|---|---|
| Cooling cooked food | 135°F to 70°F within 2 hours, and to 41°F or lower within a total of 6 hours | Food Code 3-501.14 |
| Reheating for hot holding | 165°F for 15 seconds, within 2 hours | Food Code 3-403.11 |
| Date marking ready-to-eat TCS food | Up to 7 days at 41°F or lower; the day it was made is day 1 | Food Code 3-501.17 |
| Time as a public health control | Hot or cold: 4 hours. Cold food that starts at 41°F or lower and never goes above 70°F: up to 6 hours | Food Code 3-501.19 |
| Manual hot-water sanitizing | 171°F or higher for at least 30 seconds | Food Code 4-501.111, 4-703.11 |
| Dish machine final rinse | At least 180°F (165°F for stationary-rack, single-temperature machines), never above 194°F | Food Code 4-501.112 |
Each wrong option on these questions tends to be a real number from a neighboring rule. Learn each number together with the condition that picks it, and the free drills on the flow of food and cleaning and management will show which ones have stuck.
What if I do not pass the ServSafe exam?
Retake it. The first two attempts may fall within 30 days; from the third, you must wait at least 60 days after your last attempt, and no more than four attempts are allowed in 12 months.
- Note the areas where you felt least sure while it is fresh.
- Take a full practice mock to see your score by area.
- Drill the weakest area until it clears 75%, then the next.
- Take a second full mock on new questions. Rebook when both mocks clear 75%.
A step-by-step plan is in how to pass ServSafe, and the exam itself is explained in the ServSafe Manager test guide.
How long does a ServSafe Manager pass last?
Up to 5 years, according to ServSafe; your state or city may require renewal sooner. Renewing means passing the exam again.
Plan the renewal a few months ahead: the passing score and the rules are the same, but the Food Code is updated every few years, so check what has changed since you last studied.
