What is the ServSafe Manager exam?

It is the exam behind the ServSafe Food Protection Manager Certification, one of the accredited certifications that let someone act as a certified food protection manager, which the FDA Food Code asks every food establishment to have.

The FDA Food Code (section 2-102.12) asks for at least one employee with supervisory responsibility to be a certified food protection manager, and states and cities that adopt the Food Code turn that into a legal requirement. ServSafe, run by the National Restaurant Association, is one of the best-known programs that certify those managers; others exist, and your health department accepts any accredited one.

People often mix up the Manager exam with the ServSafe Food Handler course. The Food Handler program is for front-line staff; the Manager exam is longer, proctored, and covers management duties such as HACCP and inspections as well as the kitchen rules.

What topics are on the ServSafe Manager exam?

The Food Code rules a manager needs: foodborne illness and allergens, personal hygiene, the flow of food from purchasing to service, cleaning, sanitizing and facilities, pest control, and food safety management systems such as HACCP.

The five areas as our practice test groups them, with how many questions each has in our mock
AreaIn our mockWhat it covers
Foodborne illness15Pathogens (bacteria, viruses, parasites, fungi), the Big 6, TCS food and FAT TOM, biological, chemical and physical contaminants, and the nine major allergens
Personal hygiene14Handwashing, hand care, gloves, work attire, eating and smoking at work, and when to exclude or restrict a sick staff member
The flow of food32Purchasing and receiving, storage, thawing, prep, cooking temperatures, cooling, reheating, holding, date marking, time as a public health control and service
Cleaning and facilities17Cleaning versus sanitizing, sanitizers, dish machines and three-compartment sinks, equipment, water and plumbing, pests and chemicals
Food safety management12Active managerial control, the person in charge, HACCP and its seven principles, variances, inspections, crisis management and training

ServSafe does not publish a question count per topic, so the split above is ours, weighted toward the flow of food, where most of the rules with numbers sit. Practise each area on its own page: foodborne illness and hygiene, the flow of food and cleaning and management, each with free drills.

How do you take the ServSafe Manager exam?

With a registered ServSafe proctor, either in a classroom (on paper or online) or online at home with a remote proctor watching through your webcam. Many people take a course first, but the exam can be bought on its own.

  1. Check what your state or city requires: most accept ServSafe, and some set their own renewal period.
  2. Choose a course (classroom or online) or self-study with the ServSafe Manager book and practice tests.
  3. Book the exam with a proctor, in person or online. Online proctoring needs a computer with a webcam and a quiet room.
  4. Sit the 90 questions in 2 hours. Bring a valid photo ID.
  5. Get your result, then your certificate once you pass. Keep a copy where an inspector can see it if your jurisdiction asks.

What score do you need to pass the ServSafe Manager exam?

ServSafe's FAQ gives 70%, which is 56 of the 80 scored questions. Many prep providers still quote 75% (60 of 80), so practise to 75% for a margin.

The 10 pilot questions are unscored and unmarked, so your raw count on the day is out of 80. Some jurisdictions accept the certificate without a separate local exam; a few run their own, so check with your health department. Every detail of the passing score, including what to do if you miss it, is on ServSafe passing score.

What happens if you fail the ServSafe Manager exam?

You can retake it. ServSafe lets you take the exam twice within 30 days; from the third attempt you must wait at least 60 days after the last one, and no more than four attempts are allowed in 12 months.

Every retake is a new purchase of the exam, and the 60-day wait from a third attempt can hold up a job offer or a promotion that depends on the certificate. Use the result of a failed attempt to find your weakest area, drill it, and take a full timed mock before you rebook.

How long is ServSafe Manager certification good for?

Up to 5 years, according to ServSafe. Some states and cities require renewal sooner, so your local rule wins.

Renewing means passing the exam again; a refresher course is optional. Mark the expiry date on your calendar a few months ahead so you can book an exam before the certificate lapses.

How should I prepare for the ServSafe Manager exam?

Learn the temperature and time table first, then the illness and exclusion rules, then HACCP and cleaning; take a full 90-question mock to find your weakest area, drill it, and take a second mock before you book.
